These cookies were gone in about a minute. They're my sister Caitlyn's favorite, so I had to try to make them in a gluten free version this year. Peanut butter. Chocolate. Sugar. Butter. What's not to love?
Caitlyn's Peanut Butter Kisses
1/2 c. butter
1/2 c. smooth peanut butter
1/2 c. white sugar
1/2 c. brown sugar
1 egg
1/2 t. vanilla
1 1/2 c. Pamela's Baking & Pancake Mix
1 bag of Hershey's kisses
1. Cream together peanut butter, butter, and sugar
2. Add in egg and vanilla
3. Slowly add in Pamela's mix a little bit at a time
4. Roll cookies into teaspoon-sized balls and roll these balls in white sugar
5. Place cookie dough balls on a greased or parchment paper-covered cookie sheet
5. Flatten cookies slightly
6. Bake at 325 for 15-17 minutes
7. Remove cookies from oven and press a milk chocolate Hershey's kiss into the center of each one.
8. Let cool.
