Gluten Free To Go Kit

I travel a lot.

Partly because I like to travel, and partly because many of my friends and family live at least a couple of hours away. Northern Wisconsin, Minneapolis, southern Michigan, Chicago, southern California, Iowa... not to mention the fact that my husband lives in Nashville (long story, that one...).

I'm in my car or on a plane a lot. A whole lot. And gluten free traveling is not for the faint of heart, or the rumbly of stomach.

So I've come up with a "To Go" kit with everything I need for a weekend out-of-town at a friend's house. This is a road-trip kit, mind you. I doubt the FAA would love it if you tried to get this basket on a plane.

In my "To Go" kit are the following:

One medium saucepan, one small skillet, and two wooden spoons. I've actually gotten sick from eating out of people's nonstick cookware, no matter how well it's cleaned. So now I bring my own. And we all know the perils of wooden spoons and cross contamination.

A selection of food for the trip, including a box of cereal (yay, Corn Chex!):

A couple of granola or fruit bars (yay, Lara bars!):

A loaf of Udi's (THANK you for defrosting well and still tasting good, Udi's!) and a small jar of peanut butter (no better way to avoid those deadly crumbs in other people's peanut butter jars than bringing your own!):

And some rice cakes for snacking:

I pack these foods and not fruits, veggies, nuts, etc., because I can eat naturally gluten free foods with whoever I'm visiting, and if we need to cook up something for a real meal (rice, eggs, meat, etc.), I have my pans.

I also get to carry it all in this super cute basket, which was a gift from a friend at church:

I miss traveling lightly, but traveling practically is well worth the extra effort. No hungry tummy, no hurty tummy, and my friends don't have to go a million miles out of their way to feed me. Win, win, win.
