It's no secret that gluten free mixes are pricey. While I could buy a regular cake mix at the store for a buck or two, a comparable gluten free one is usually $4-7. This is crazy.
Yet every once in awhile an affordable option catches my eye and I decide to give it a go. Often this results in a great deal of disappointment ("No WONDER it was only $3!") and a batch of cookies that go into the trash.
But sometimes... sometimes I am rewarded with extreme tastiness.
Hodgson Mills new brownie mix caught my eye the other day. It was a delightful $3 (in contrast to a nearby Betty Crocker brownie mix of the same size for $4.50), so into the cart it went.
I baked them up a few days later, and brought a warm one with a scoop of vanilla ice cream over to my husband. He was immersed in Olympics viewing, and absentmindedly took a bite.
"Whoa," he said, turning from the television. "This is a new mix, isn't it? These are GREAT!"
And great they were. Fudgy, chocolatey, moist, and just plain delicious. They held together well and easily made enough for an 8x8 pan.
These will now be the go-to brownies for our house, both for taste and for value.
