Nothing makes my husband happier than Mexican food. He'll go on and on about where he has eaten the best fish tacos (Tijuana), where he found the best tortillas (Cabo San Lucas), and where he tasted the best salsa (San Diego).
Before we were dating we traveled to Tijuana together with a group of college friends and visited his very favorite taco stand.
"The rule is that you have to eat at least five tacos or you aren't marriage material," he told our whole group. We all dutifully ate at least five tacos, guys and gals alike. It wasn't hard. They were fantastic.
Years later, when we started dating, I reminded him of that moment.
"Would you have asked me out if I had failed the taco test?" I asked.
"Uh..." he hesitated.
"You're HESITATING?!" I exclaimed.
"It's an important test!" he said.
Unfortunately for his Mexican food loving tastebuds, we now live in Wisconsin. Not exactly the land of avocados and mahi mahi. Still, we do when we can.
Since we're trying to eat a bit healthier, I've jumped on the food bandwagon of our southern neighbors, too. There are lots of great Mexican-inspired meals that use lots of vegetables and fresh ingredients. My general rule is, if my husband is willing to grill out in the snow, I'm willing to cook something Mexican-inspired.
These are our latest attempt at fajitas. We make our own corn tortillas with masa flour instead of using gf flour ones. This is both really affordable and quite tasty. These fajitas are far from totally authentic (like I said, it's Wisconsin!), but they are tasty, healthy, and 100% gluten free!
Ingredients:
* 4 chicken breasts
* 2 green peppers
* 2 red peppers
* 1 red or white onion
* 2 T. cilantro
* 1 T. lime juice
* Masa (corn) flour
Marinade ingredients:
* 2 T. lime juice
* 1. t. cumin
* 2 T. cilantro
* 1 T. Worcestershire sauce
* 1/2 t. red pepper flakes
* 1 small can green chiles
* salt and pepper to taste
Directions:
1. Marinate the chicken breasts for a couple of hours. Then grill them up until they are tasty good.
2. Chop the peppers and onions into strips. Sprinkle on cilantro, salt, pepper, and lime juice. Place into a foil packet and grill until tender.
3. Mix Masa flour with water until it is wet enough to form into 2" balls. Place dough balls onto a griddle (medium heat) and grill until they are slightly brown on each side. (These are your yummy tortillas.)
4. Serve warm, with tortilla chips and guacamole!
