What to Cook for a Gluten Free Guest: Dessert 2

Maybe ice cream isn't your style. Maybe it's -20 degrees outside, and you would really rather bake something nice and warm. Gluten free desserts can be tricky, so we'll start small.


My brother-in-law Jared (of He Sowed She Sowed fame) swears by these. And he's not wrong - they are delicious, easy, and 100% gluten free.

Jared's Peanut Butter Cookies


Ingredients:
1 cup sugar (white or brown)
1 cup peanut butter (smooth works best)
1 large egg

Directions:
1. Preheat the oven to 350.
2. Mix all the ingredients together. Roll into 1" balls. Roll in additional sugar to coat evenly.
3. Cover a cookie sheet with tinfoil.
4. Press dough balls onto sheet using a criss-cross pattern with a fork.
5. Bake for 12 minutes.
6. Let cool on the sheet for 1-2 minutes and then remove with a spatula to cool on a wire rack. Makes 12-18 cookies.

  1. There is nothing better than peanut butter cookies. Well, other than peanut butter cookies with enjoy life chocolate chips.
