My husband is a Costco fanatic. His affection for Costco has only grown with time.
I was moderate on Costco. It's fine for what it is, but it can be a bit overwhelming. Do we really need 320 oz of chicken broth?
In the past two years, I've become a convert. We love Costco so much it's become a verb at our house. "Time for Costco-ing!" we say.
Why do we love Costco so? Not only can we buy produce in bulk for our green smoothies (hellloooo, twenty kiwis!) but Costco has gluten free products galore. Some of our favorites:

These are delightful and - get this - healthy. Pop them on a baking sheet at 400 for fifteen minutes, and you have fries! But not fried fries. Sweet potato-y, tasty, flavorful goodness. We mix some rosemary, olive oil, and Lawry's on these before we bake them, which gives them an extra tasty punch.
On top of their great product selection, Costco also has really good hiring and workers' policies. They are consistently on Fortune's list of the 100 best companies to work for in America. You can read about their ranking here.
Have you ever been Costco-ing? What'd you think?
