Baking with a Friend

Hosting a family of gluten-eaters at my gluten-free home is going very well. My nieces loved Annie's gluten free Macaroni and Cheese, and gobbled up some Ian's Fish Sticks as well.

But the best part of having my little red-headed niece around is that she is a great helper. Tonight she and I made blondies. I love Namaste's blondie mix (not to mention the fact that their mixes are made in a facility free of most common allergens), but we doctored it up a little and made it even better.



We made the mix according to the instructions, and then poured in a cup of chocolate chips and sprinkled half a cup of shredded coconut on top.



The result?


A+, according to Aleah! Since there's only a quarter of a pan left after four hours, I'm going to claim this as a serious baking success.
